One very cold December, I attended my first official Smorgasbord at the home of Beryl and Neil Hulten. I had never had a "full on" smorgasbord prior to that evening. As a person who has been passionate about eating and coooking my whole life, I was more than excited to attend. At that time, I was beginning to understand more about Scandanavian foods. My father and mother in law, Mary and Gordon Slethaug, had turned me on to this cuisine, so when we visited Waterloo Beryl suggested we come for the meal that evening. I can remember how expertly Beryl prepared everything and how proudly she walked me around the table. There was a fruit soup, a dish of Jansson's Temptation, cold dishes, warm dishes, flatbreads, pickled dishes and of course, lots of herrings. It was extremely cold and snowing outside. What I remember most from that evening is the thought and time that Beryl put into each dish and how warmly we were welcomed into her home. Upon our next visit to Waterloo, Beryl shared a little more of her life with me, about her playing music and her love of travel, but I will always remember her for attention to detail of that meal. I've had many Scandanavian meals and smorgasboards since the time we first ate at Beryl's. And every Christmas, I include something that was at Beryl's table on my holiday menus.
